Lamb Leg with Spiced Coffee and Saffron Butter

Cooking Time: Varies, 25 to 30 minutes per 500 grams for medium or until the lamb is cooked to your liking       Serves: 12 people 

You will need​: 

Special Equipment:

  • Mixing bowl
  • Oven Tray
  • Food processor (optional, for mixing butter)

Ingredients:

  • Moomoo’s Australian lamb leg
  • 300 gm butter
  • 1.5 tablespoons smoked paprika
  • 2 teaspoons turmeric
  • 1 tablespoon chili flakes (optional)
  • 2 tablespoons black pepper
  • 2 teaspoons cinnamon
  • 2 teaspoons ground cardamom
  • 1/2 tablespoon coriander
  • 1 teaspoon cumin
  • A large pinch of saffron
  • 1 tablespoon of garlic, minced
  • 2 tablespoons onion powder
  • 2 tablespoons dehydrated orange peel
  • 2 tablespoons ground coffee
  • 3 tablespoons salt

Recipe Instructions​

  1. Mix the butter with all herbs.
  2. Pat dry the lamb leg with kitchen napkins.
  3. Cover the lamb leg with the butter, coat it very well.
  4. Leave it in the fridge from 12 to 24 hours, not covered.
  5. Add it to a hot oven but don't cover it, and remove every hour to baste it.
  6. Then cover it and leave it a bit more.
