One Pot Rice with Herbs & Liver

Cooking Time: 15 minutes  Serves: 3-4 people 

You will need​: 

Special Equipment:

  • Large pot

Ingredients:

  • 1 tablespoon sugar
  • 1 medium onion shredded
  • 2 1/2 tablespoons ghee or butter
  • 1 teaspoon cinnamon
  • 1/3 teaspoon cardamom
  • 1/3 teaspoon nutmeg
  • 1/4 teaspoon black pepper
  • 2 cups of rice soaked and washed for half an hour
  • salt and pepper to taste
  • 2 cups of water
  • raisins and nuts to preference

Recipe Instructions​

  1. In a large pot, heat the ghee or butter over medium heat.
  2. Add the shredded onion to the pot and sauté until golden brown and caramelized, about 5-7 minutes.
  3. Add the chopped liver to the pot and cook until browned, about 3-5 minutes.
  4. Stir in the sugar, cinnamon, cardamom, nutmeg, and black pepper, and cook for another minute.
  5. Add the soaked and washed rice to the pot. Stir well to coat the rice with the spices and onion mixture.
  6. Pour in the water and season with salt and pepper to taste. Stir to combine.
  7. Bring the mixture to a boil, then reduce the heat to low. Cover the pot with a lid and let it simmer for about 15-20 minutes, or until the rice is cooked and the liquid has been absorbed.
  8. Once the rice is cooked, fluff it with a fork and mix in the raisins and nuts.
  9. Serve the One Pot Rice with Herbs & Liver hot, garnished with additional nuts and herbs if desired.
